Breakfast(s) of Champions (Smoothies)


 

Some of you can probably skip breakfast and still feel pretty good all day. We aren’t those people. Erich and I are both big fans of breakfast. A while ago we shared the recipe we use for the hot cereal Erich eats for breakfast every weekday. This week we want to share a few more quick breakfast ideas with you to get you beyond the cold cereal and into some more deliberate and delicious nutrition.

Today … the breakfast smoothie. There are two smoothies that I will make in the morning—one green, one purple—depending on my mood. There is a lot of room for play in these “recipes,” and I’m sure you’ll be able to find a combination that suits you.

These can be blended the night before and stored in the fridge for a grab-and-go breakfast.

Green Breakfast Smoothie

Handful of kale
Handful of spinach
One apple
One half of an avocado
1/2 cup of FAGE Greek yogurt (we use this yogurt because of the high protein content. Half a cup is 10 grams of protein!)
1/2 cup of water or milk or nut milk
1 Tablespoon coconut oil

Toss it all in the blender and let ‘er rip! This makes about a pint of smoothie.

Purple Breakfast Smoothie

One apple
5-7 strawberries
1/2 cup of blueberries
1/2 cup of blackberries
1/4 cup of red currants or raspberries
1/2 cup FAGE Greek yogurt (again for the protein)
1/2 cup water or milk or nut milk
1 Tablespoon coconut oil
1 teaspoon of chia seeds (I actually add these first to help keep them in the smoothie and not stuck to the side of my Vitamix.)

That’s it. Just blend and enjoy!

A few other ingredients that I keep on hand to add to my smoothies as the mood moves me:

Hemp Hearts
Flaxseed
Almond Butter (We buy fresh-ground almond butter at Fred Meyer–just almonds, nothing added.)
Raw Honey
Ginger
Cinnamon
Nutmeg
Bananas
Pears

Just get started and try a rainbow of flavors until you find the blends that suit you. Enjoy!
